when I add a new chart in Powerpoint 2013 (and in 2010 and 2007 too), I can browse the default folder for custom templates, and this folder is "C:\Users<UserName>\AppData\Roaming\Microsoft\Templates\Charts". Id' like to know if this folder is customizable, so when I look for custom templates within the "insert template" form, I can find templates stored in another folder. The purpose of this is to put all company templates in a network share: since they change very frequently, it would not be efficient to deploy manually all templates to users' computers every time (also via gpo, it would not be difficult but not efficient).

No, you can't change the default location of CRTX file. You only can change shared location of the Potx file.
