Is there a way to have the category colors shared on a calendar that has been published online?

Base on my knowledge, there is no way to share colors category on a calendar that has been published online.

Color category selections are stored in the users default mailbox storage location, which should be the mailbox on the server. Color Categories on calendar would be visible to the participants only on an exchange server environment. If the participants are not on an exchange server items would be displayed in white color.
