I believe this could simply be done in Add/Remove programs.

I looked at the recomendations, but the articles do not contain information on how to revert back to exchange server 2000. I orginally had an exchange server 2000 on an older server. I then installed exchange server 2007 on a new server. but since 07 is not supported in a production environment, I want to undo 07 and revert back to 2000.

As far as I know, there is no rollback option that would allow you to revert to the state of the Exchange 2003 server the way it was before installing Exchange 2007 on it (unless it was imaged... but that might cause problems of it's own).Maybe a migration expert could propose a solution:http://social.technet.microsoft.com/Forums/en-US/exchangesvrmigration/threads

What do you mean about reverting back to exchange 2000?
Is there any issue to use the old exchange environment after remove the exchange 2007?
For the schema change, I agree with Le Pivert. It can’t rollback to old schema, but it shouldn’t prevent the normal usage of old exchange server, as I know
