Why should i disable offline files in roaming profile
How can i use roaming profile with folder redirection ? .What is the benefit

Hello supportsib,
With roaming user profiles, if you do not disable the cache option for Offline Files, synchronization problems may occur. The user profile can be placed in an unstable state as both Offline Files and the roaming user profiles attempt to synchronize the files
in a user's profile.

The main advantage of roaming profiles is that favorites, documents and application data are stored on the network. So a user can work on different pc's and the settings are loaded from the network.
You can set roaming profiles through Group Policy.

How can i exclude everything except desktop ( windows 2008 domain controller , windows 7 client )

Hi,
If you want to exclude everything except Desktop when configuring Roaming Profile, I suggest we could configure the
Exclude directories in roaming profile setting via Group Policy. The setting lets us exclude folders that are normally included in the users profile. Please navigate to the following path in GPMC to configure the setting:
User Configuration\Policies\Administrative Templates\System\User Profiles\
Exclude directories in roaming profile.
