Please perform the following steps to check it:

In the left pane, right-click Fax, and then click Properties.
In addition, you could also use the following method enable activity logging for a fax server.

On the Activity Logging tab, select the Log incoming fax activity check box to start logging incoming faxes and the Log outgoing fax activity check box to start logging outgoing faxes.

You should receive an alert that the Fax service needs to be stopped and then restarted. If you do not, then right-click Fax, click Stop, right-click Fax again, and then click Start.

For instance, User#1 calls and says that their faxes aren't going. Previously I could check the fax console and see that User#2 had sent 40 faxes at once, so it's backed up. Or I could see that none of my modems are sending so there must be a problem with either the phone line or the modem and I could reset it. Now I have no way of monitoring this.
Checking a log isn't going to help with either of these.
Suggestions?
I would also like any suggestion to Andy's comment. This is my exact issue. 4 different computers sending to my fax server and the most information I can get on current activity is to right-click on Fax (Local) in the Fax Service Manager and go to the General tab.

I cant tell you how much a HATE that I as an administrator can't manage the faxes. This is absolutely ridiculus. FAXES ARE ERROR PRONE. Certain people need access to all the faxes to manage them. I'm in the healthcare industry, and doctors that send faxes are not going to sit there and make sure their faxes got out. THAT IS MY JOB!!!!!!
THERE NEEDS TO BE A WAY AROUND THIS DEFAULT BEHAVIOUR. At least make it so that you can't view the actual faxes only manage the routing of it.
By the way, Windows 7 sends attached images upside down in relation to the cover page. DUH!!!!!!

The Windows Server 2008 R2 is still not able to view all the outgoing faxes. Idid not have the "Fax Settings" option in Fax and Scan Tools like the Windows 7 Workstation.
So as it stands, a Windows 7 workstation can view all outgoing faxes, a Server 2008 R2 cannot, even after the hotfix. What gives?

I use standard US Robotics modems. No VoIP or PBX. This issue is not hardware related.
The issue is that as an administrator you should have "permission" to view all outgoing faxes in the fax manager on the server. The only managability is to right-click on Fax (Local) in the Fax Service Manager and go to the General tab. This will show you the amount of faxes being sent, but you are not able to "manage" them other than disabling send or receive all together.
This functionality was present in the Windows Server 2003 interface but was taken out of Windows Server 2008.
Has there been any update to this? I have created a service that was running on Window Server 2003, and is now running on Windows Server 2008 R2 that does fax on demand.
I applied the hotfix to the Windows Server 2008 R2 machine, and assigned the "view outgoing queue" rights to the necessary users, but I cannot see the faxes in the outgoing queue unless I log into the server as the user that the service runs under.
I applied the hotfix to my Windows 7 desktop thinking that might have some help, but it doesn't to anything differently.
With SP1 right around the corner (and already in some people's hands) is this addressed in it?

Clearly Microsoft knows this. Why is Microsoft leading so many administrators to waste so much time?
I'm also getting the "update is not applicable to your computer" error message when trying to apply the hotfix.
As it stands I cannot manage outgoing faxes, or review sent faxes to confirm they went out on the server. I love it when Microsoft breaks things that worked perfectly in prior versions, turns a blind eye, and doesn't fix it till the next version.

It'll start... ME.
It seems like this a dead end for someone who has a Windows Server Standard 2008. It sure is annoying.
Thus I think also the MSFT will not fix this.

This is not a fix for this issue. I would hardly call this a workaround. We have admins that need to address fax sending issues when the faxes don't go through. Seeing the global outbox and sent items is a must for us. It needs to be available from the fax console so the admin (secretary types, not IT admins) can review the issues.

This is a total waste of time. The hot fix doesn't work on windows 2008 R2 Standard 64bit. I keep getting the error message "This Update is not applicable to your computer".
I've got customers that are really pissed off because we can't manage the Outbound queue.
Does anyone have a solution for this yet?

3. Click on Add
4. Either connect to a fax modem (by giving modem name) / Connect to a fax server on my network (by giving the fax server computer name.
5. Click Next & close.
6. Restart the Ms-Fax service.
7. Try to send & receive a test fax.
The entries will show in the Ms-Fax console.

Consider the following scenario:
- You install the Fax Server role on a computer that is running Windows Server 2008 R2.
- Your account is assigned the View Outgoing Jobs permission in Fax Service Manager on the Fax server.
- You open Windows Fax and Scan to check outgoing faxes.
In this scenario, you cannot view or manage outgoing faxes from other users
