Can I upgrade WindowsXP to Windows Server 2008 without loosing any data and installed applications?

Windows XP is a client OS, not a server OS. You cannot upgrade a client OS to any server OS.
Windows Server 2008 can be either 32 or 64 bit. Windows Server 2008 R2 is 64 bit only.

Bill is right. Windows XP and Windows Server 2008 are different OS, you can’t upgrade Windows XP to Windows Server 2008. To install Windows Server
2008, you need to perform a clean install. Please refer to the following guide:
Installing Windows Server 2008
Windows Server 2008 has both 32bit and 64bit version. But Windows Server 2008 R2 only owns 64bit version.
