Right hand click issues with windows 8.1 after updates
I can no longer right hand click delete or open with right hand click, system stops working or seems to reboot

Try to boot into Safe Mode and uninstall the suspected updates. Reboot and recheck the issue.

You may also go for a System Restore-select any Restore Point when there was no such issue.

I also shall suggest you to download the ShellExView  It is an excellent tool to view and manage all installed shell extensions. The rule is to disable non-Microsoft context menu handlers one-by-one and verify if the problem is solved.

If the above doesn't help then  run the System File Checker tool (SFC.exe) to scan your system files and to repair missing or corrupted system files.

go to Control Panel\All Control Panel Items\Personalization and set Windows Default Themes - Windows

and try right click again, I suggest also do clean boot or uninstall 3rd party theme installed (if any)

Hi Randystephenmills,
"I can no longer right hand click delete or open with right hand click"

Do you mean the two options disappeared from the right click menu ?
Apart from S.Sengupta`s and  britishdhez`s suggestions, please also try the following suggestion to have a check :
1.Run "dism /online /cleanup-image /restorehealth" to have a repair
2.Login with another account or create a new account to have a check

Best regards

Example is, I can right hand click on an open desktop and it works fine but if I right hand click on a file or folder on the desktop file manager stops working. On the desktop I have to drag files or folders to recycle bin to delete. If I am in my documents or picture program I cannot right click to delete or open, file manager I guess stops working, I can delete by select all or left hand click to select individual files but I cannot right hand click to do so which works a lot faster.
