Carey has posted a pretty good video. You need to either use WET (Windows easy transfer) or USMT (user state migration transfer) to copy the xp profile to the windows 7 machine. It will gather all the right data and transfer them into the correct relevant paths. Since the profile directories have changed it would not be advisable to copy the profiles manually.
